HOW TO MAKE VIAZI KARAI
Viazi karai is a coastal dish and its my favorite meal and easier to make. If you do not know this meal i know you are probably confusing this with bhajia. Bhajia is a total different snack which is easy to make..You also can also make at the comfort of your home.
This recipe serves a family of 5 - 10 people.
Ingredients
13 potatoes
1 1/2 cups of all purpose flour
1 1/2 tablespoon of food color
2 cloves of garlic
3/4 cup of water
Oil for frying
Steps
Prepping the potatoes
1. Wash the potatoes thoroughly to remove the dirt and soil
2. Pour water into a sufuria and add in the potatoes and bring to boil.
3. Boil the potatoes for 30-45 minutes.. Do not over cook them.
4. Peel the potato skin as it comes out easily when cooked.
5. Take one potato, split it into half and the half split it three times.. So one potato will have been split into six portions.
6. Do the same to the other potatoes.
Preparation of paste
1. In a mortar and pestle,grind the garlic cloves
2. In a large bowl, put in the flour.
3. Add your garlic and food color.
4. Add water and mix till the consistency flows...it should not be very thick.
Mixing and frying.
1. Put in the boiled potatoes into the flour mixture and mix gently so that the potatoes can be covered well in the mixture.
2. Put some oil in a frying pan and let it heat
3. Add in the potatoes one by one. Preferably use a spoon to scoop the potato well.
4. Cook on one side until it becomes golden brown and then flip to the other side.
5. Serve hot.
