EASY AND QUICK WAY OF PREPPING VEGETABLE RICE
We all know
of white plain rice or white rice in coconut sauce or pilau. I wanted to make
some special rice that will be appetizing and eye-catching. I have done this
recipe for a long while and it has worked well.. You too can also try it at the
comfort of your home.
INGREDIENTS.
2 medium-sized onions
2 medium red capsicum
2 medium green capsicum
2 medium yellow capsicum
2 tablespoonful of dark soy sauce (optional)
Cooked rice or leftover rice (I cooked 4 cups of rice)
Steps
1. Cut the vegetables in cubes.
2. In a sufuria, add some oil and onions and fry the onions for a while..Do not let them turn to golden brown.
3. Simmer (reduce) the to medium-low heat.
4. Add the red,green and yellow capsicum and stir for a minute.
5. Add the 2 tablespoons of soy sauce and stir.
The soy sauce helps to give flavor, color to the rice and also maintain the color of the fried vegetables.
6. Add in the left over rice or cooked rice and mix until the vegetable and the rice mix together.
7. Serve hot with your preferred stew.
